- Inspect sampled food-contact surfaces for food residue, biofilm, grease, blood, standing water, odour, or incomplete cleaning and sanitizing.
- Confirm sanitizers, dishwashing, chemical dilution, contact time, storage, and verification follow the approved procedure and do not contaminate food.
- Inspect for pest activity, entry points, damaged packaging, standing water, waste build-up, leaks, drain issues, or structural defects near fresh food areas.
- Verify spoiled, expired, contaminated, returned, recalled, or otherwise unfit food is identified, segregated, recorded, and disposed of or returned through an approved process.
- Review fresh food waste, trim loss, spoilage, rejected deliveries, remakes, and discard reasons for recurring safety, quality, supplier, or process problems.
Section 2Approved suppliers, receiving condition, temperature, and acceptance
- Verify fresh food is received only from approved suppliers with the required delivery, traceability, batch, lot, or source documentation.
- Inspect delivery vehicles, containers, totes, crates, and packaging for cleanliness, damage, pests, leakage, contamination, or evidence of temperature abuse.
- Measure representative chilled, frozen, and other temperature-controlled foods using the approved method and compare results with applicable receiving limits.

- Reject, quarantine, or otherwise control any delivery that fails approved temperature, source, packaging, freshness, date, traceability, or contamination requirements.
Section 4Fresh produce, herbs, salads, washing, and ready-to-eat preparation
- Inspect produce, herbs, salad ingredients, fruit, and other fresh plant foods for damage, spoilage, contamination, foreign matter, and acceptable freshness.
- Confirm produce requiring washing is cleaned using potable running water or the approved food-safe process before cutting, preparation, or service.
- Verify pre-washed or ready-to-eat produce is handled according to label instructions and protected from contact with contaminated surfaces, utensils, or raw foods.
- Check damaged or bruised areas are trimmed or the product is discarded when spoilage, contamination, or quality makes it unsuitable for service.
- Verify cutting boards, knives, sinks, containers, salad equipment, and preparation surfaces used for ready-to-eat produce are clean, sanitized, and protected from raw-food contamination.
- Confirm prepared produce is covered, labelled, dated, returned promptly to controlled storage where required, and discarded when approved shelf-life or safety limits are exceeded.
Section 6Preparation, batch control, time limits, labelling, and employee hygiene
- Observe fresh food preparation and verify employees follow approved handwashing, glove or utensil use, illness-reporting, and no-bare-hand-contact rules where applicable.
- Confirm ingredients are removed from controlled storage in manageable quantities and are not left exposed longer than the approved preparation time.
